Sage’s Kitchen – Cinnamon Raisin Bread!

Bread machine friendly, and not the super sweet, frosted bakery bread.

Perfect toasted, grilled, or just snacking. I have made a lot of cinnamon bread in my bread machine. After decades of trial and error,  this variation has the best texture and flavor.

Place in order, into pan and paddle of bread machine that has been sprayed:

1 & 1/4 cups warm water

2 teaspoons sea salt

1/3 cup white sugar

2 & 1/2 tablespoons NIDO

2 & 1/2 tablespoons regular olive oil

4 cups bread flour

2 & 1/2 teaspoons cinnamon

2 & 1/2 teaspoons bread yeast

1 cup good quality, fresh, soft, raisins

Set bread machine for sweet cycle if you have it,  2 lb. loaf, light crust. Always check to see, during kneading, to make sure it is smooth and roundish. 

NIDO is a toddler milk that I buy at Sam’s Club. It produces better bread, over regular dry milk.  Dry milk is frequently called for in bread machine recipes. NIDO, produces superior results for me. It also seems to stay softer, longer, than bread without it. NIDO is shelf stable, making it an excellent pantry staple for bread makers.
