Sage’s Kitchen – Cinnamon Raisin Bread!

Bread machine friendly, and not the super sweet, frosted bakery bread.

Perfect toasted, grilled, or just snacking. I have made a lot of cinnamon bread in my bread machine. After decades of trial and error,  this variation has the best texture and flavor.

Place in order, into pan and paddle of bread machine that has been sprayed:

1 & 1/4 cups warm water

2 teaspoons sea salt

1/3 cup white sugar

2 & 1/2 tablespoons NIDO

2 & 1/2 tablespoons regular olive oil

4 cups bread flour

2 & 1/2 teaspoons cinnamon

2 & 1/2 teaspoons bread yeast

1 cup good quality, fresh, soft, raisins

Set bread machine for sweet cycle if you have it,  2 lb. loaf, light crust. Always check to see, during kneading, to make sure it is smooth and roundish.

NIDO is a toddler milk that I buy at Sam’s Club. It produces better bread, over regular dry milk.  Dry milk is frequently called for in bread machine recipes. NIDO, produces superior results for me. It also seems to stay softer, longer, than bread without it. NIDO is shelf stable, making it an excellent pantry staple for bread makers.

Sage’s Kitchen – Basic White Sandwich Bread

Although we love whole grains here, sometimes you just need or want,  plain, white bread.

Thrifty, and excellent for sandwiches, grilled sandwiches, and toast.

1 & 1/3 cups warm water

1 & 1/2 teaspoons sea salt

2 tablespoons white sugar

1/4 cup regular olive oil

4 & 1/2 cups bread flour

1 & 3/4 teaspoons yeast. I use bread machine yeast in the bread machine.

Load bread machine in the order your machine recommends. Mine starts with the liquid first. Be sure to spray the inside of your baking pan and the paddle, for super easy cleanup. Very important to add the yeast last;  and to make a “well” in the flour, to put the yeast into!

We like a soft crust on this bread. Set machine for 2 lb. loaf, light crust, and regular cycle. The regular cycle is usually the first option in the menu.

When we were a busy homeschool family, I ran our bread machine every, single, day. ☺️

Happy homemaking!

Saturday Bake!  Cottage Cheese Dill Bread!

I usually alternate between sweet and savory. Today’s daily bread is savory.   It is bread machine friendly,  complete protein, and makes a great accompaniment to soup, salad, and is splendid for grilled sandwiches. I like it for cheese toast made in the toaster oven.

3/4 cup warm water

2/3 cup cottage cheese

1 tablespoon olive or avocado oil

1 tablespoon white sugar

1 & 1/4 teaspoon sea salt

3 cups bread flour (if you make it by hand use all purpose flour)

1 tablespoon dried onion flakes

1/2 teaspoon dill seeds

1 teaspoon yeast. I have been getting good results using bread machine yeast.

Add all ingredients ingredients to baking  pan in order listed. I ALWAYS spray the inside of the baking pan first.

Be sure to make a well with the back of a spoon to put the yeast into. You do not want the yeast sinking into the wet ingredients!

Place the baking pan into the machine, and set it to basic bread, 1.5 lb. loaf, regular crust, and turn the machine on. You will want to check after about 10 minutes to see if you need to add water or flour. Even with the add-ins, the dough should be smooth and rounded. If your dough is too wet, add flour, one tablespoon at a time. If it’s too dry, add warm water one tablespoon at a time. Smooth dough makes a better loaf.

Here is the beautiful cottage cheese dill bread, still slightly warm.  The aroma is mouth watering.

You can see my crumb saving bread cutting board. Homemade bread has a wonderful crust, which makes a lot of crumbs. I save these crumbs in the freezer to top casseroles of all kinds. And as a wonderful addition to meat loaf
