Sage’s Kitchen – Bread Machine Meatloaf & Spicy Tater Tots!

If you like meatloaf with crusty edges all around, there is no better method than baking it in your bread machine!

Bread Machine Meatloaf!

1/3 cup dried minced onion

2 lbs. Ground beef (I only use 90/10)

2 tsp. Sea salt

1 Tablespoon dried parsley or 2  Tablespoons fresh & chopped

1 tsp. Garlic powder or granulated garlic

1/4 teaspoon ground pepper

1 cup quick oats (not instant)

2 eggs

I always beat the seasonings with the eggs before adding to the meat. I do this to prevent over-working the meat.

Remove the paddle from your bread machine, and spray the interior well.  Pack the meatloaf mixture into the baking pan of the bread machine, and place inside the bread machine, being sure to seat it properly.

Use the bake or homemade cycle to cook the meatloaf. My machine has a pre-programmed setting called “bake.”  It only bakes with no kneading or rising cycle.

I run the bake cycle for one hour, then spread the glaze over the top.

1/2 cup ketchup

1 tablespoon brown sugar

1 teaspoon mustard, spicy or yellow

Close the machine, set to bake for another 15-30 minutes, your preference for doneness.

When finished, let the meatloaf rest in the machine for 5-10 minutes. Carefully remove with non-scratching tools.  Slice and serve with additional ketchup or your choice of sauce.

Spicy Tater Tots!

Preheat oven to 400.

Line your rimmed baking sheet with foil, and spray with olive or avacado oil.

Spread desired amount of Tater Tots on the sprayed pan, then sprinkle your favorite spicy blend all over the Tots. We really like Slap Ya Mama!  Bake for 20-30 minutes, until you are happy with their texture.  The amount of spice you sprinkle is entirely up to you, and how spicy you and your family prefer.  These are sooo good!

Happy homemaking!
